Smoked Sausage Hash with Fried Eggs
Mixed Winter Fruit Salad
Ingredients
- 1 (14-oz) pkg smoked sausage
- ½ (12-oz) frozen seasoning blend (diced onion, bell pepper and celery), thawed
- 1 (32-oz) pkg country style hash browns, thawed
- ½ tsp salt, ½ tsp pepper
- ¼ cup butter, divided
- 6 large eggs
Instructions
- Cut sausage into bite-sized pieces. Cook in a large nonstick skillet 5 minutes or until browned.
- Remove from pan; reserve drippings in skillet.
- Add seasoning blend to skillet, and sauté 3 minutes or until tender.
- Add hash browns; cook, stirring occasionally, 10 minutes or until brown.
- Add sausage back to skillet with salt and pepper; cook 2 minutes or until heated through.
- Divide hash over serving plates.
- Meanwhile, in skillet, melt 2 Tbsp butter over medium heat.
- Crack 3 eggs into skillet, and cook, covered, 3 minutes or until center is set.
- Remove from skillet and place eggs over hash.
- Repeat procedure with remaining butter and eggs.
Side Dish Ingredients
- 1 (15-oz) can Mandarin oranges, drained
- 1 (15-oz) can pear slices, drained
- 2 apples, cored and sliced
- 2 Tbsp sugar
- Juice of one lemon
Side Dish Instructions
- Toss together Mandarin oranges, pears, apples, sugar and lemon juice in a serving bowl.
