Smoked Sausage Hash with Fried Eggs

Ingredients

  • 1 (14-oz) pkg smoked sausage
  • ½ (12-oz) frozen seasoning blend (diced onion, bell pepper and celery), thawed
  • 1 (32-oz) pkg country style hash browns, thawed
  • ½ tsp salt, ½ tsp pepper
  • ¼ cup butter, divided
  • 6 large eggs

Instructions

  1. Cut sausage into bite-sized pieces. Cook in a large nonstick skillet 5 minutes or until browned.
  2. Remove from pan; reserve drippings in skillet.
  3. Add seasoning blend to skillet, and sauté 3 minutes or until tender.
  4. Add hash browns; cook, stirring occasionally, 10 minutes or until brown.
  5. Add sausage back to skillet with salt and pepper; cook 2 minutes or until heated through.
  6. Divide hash over serving plates.
  7. Meanwhile, in skillet, melt 2 Tbsp butter over medium heat.
  8. Crack 3 eggs into skillet, and cook, covered, 3 minutes or until center is set.
  9. Remove from skillet and place eggs over hash.
  10. Repeat procedure with remaining butter and eggs.

Side Dish Ingredients

  • 1 (15-oz) can Mandarin oranges, drained
  • 1 (15-oz) can pear slices, drained
  • 2 apples, cored and sliced
  • 2 Tbsp sugar
  • Juice of one lemon

Side Dish Instructions

  1. Toss together Mandarin oranges, pears, apples, sugar and lemon juice in a serving bowl.
