Southern Pork and Tomato Grilled Cheese Sandwich
Ingredients
- 1 (16-oz) pkg bacon
- 12 slices home-style white bread
- 12 slices smoked Cheddar cheese
- 1½ lb chopped smoked pork
- 1 cup barbecue sauce
- 2 tomatoes, thinly sliced
- Pickled Red Onions (recipe follows)
- ½ cup butter, softened
- 1 (5-oz) container baby arugula
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
- Top half of bread slices with 1 slice cheese.
- Arrange pork over cheese, and drizzle with barbecue sauce .
- Top with tomato slices, desired amount of Pickled Red Onions, and bacon.
- Place remaining cheese slices over bacon, and cover with remaining bread slices.
- Spread softened butter over outsides of sandwiches.
- Cook sandwiches in a large nonstick skillet over medium-low heat, 4 to 5 minutes per side or until bread is toasted and cheese is melted.
- Separate bread slices, and add arugula to each.
