Gooey Fontina Grilled Cheese with Brussels Sprouts Slaw

Ingredients
- 2 Tbsp olive oil
- 1 (4-oz) pkg prosciutto, chopped
- 1 lb Brussels sprouts, trimmed, and thinly sliced
- ½ cup golden raisins
- 2 Tbsp apple cider vinegar
- 2 tsp honey
- ¾ tsp salt, ½ tsp pepper
- 12 slices whole-grain bread
- 12 slices fontina cheese
- ½ cup butter, softened
Instructions
- Heat oil in a large skillet over medium heat; add prosciutto, and cook 5 to 6 minutes or until crisp. Using a slotted spoon, remove prosciutto from skillet, and drain on paper towels.
- Add Brussels sprouts to drippings in skillet. Cook, stirring, 2 to 3 minutes or until crisp-tender.
- Stir in raisins, vinegar, honey, salt, pepper, and prosciutto; remove from heat, and set aside.
- Place 1 slice cheese over half of bread slices; top with Brussels sprouts slaw, and remaining cheese slices.
- Cover with remaining bread slices.
- Spread outsides of sandwiches with softened butter.
- Cook sandwiches in a large nonstick skillet over medium-low heat, 4 to 5 minutes per side or until bread is toasted and cheese is melted.
