Irish Pub Salad
Ingredients
- 3 heads Bibb or Boston lettuce, torn
- 1 cup diced pickled beets
- 1 cup pickled green beans
- 1½ cups thinly sliced English cucumber
- 1 pint cherry tomatoes, halved
- ½ onion, thinly sliced
- 4 hard-cooked eggs, peeled and quartered
- ½ (8-oz) block Cheddar cheese, cut into small wedges
- Creamy Tarragon Dressing (recipe follows)
Instructions
- Place lettuce in a large bowl. Arrange beets, green beans, cucumber, tomatoes, onion, eggs, and cheese on lettuce.
- Serve with Creamy Tarragon Dressing recipe.
