Chocolate Stout Cupcakes with Irish Cream Frosting

Ingredients
- 2 cups sugar
- 1 cup stout beer (or use strong brewed coffee)
- 1 cup butter
- ¾ cup unsweetened baking cocoa
- 2 large eggs
- ⅔ cup sour cream
- 2 cups all-purpose flour
- 1½ tsp baking soda
- Irish Cream Frosting (recipe follows)
Instructions
- Preheat oven to 350°F; line 24 muffin cups with paper or foil baking cups.
- Combine sugar, beer, butter, and cocoa in a saucepan. Cook over medium heat, stirring, until butter is melted. Cool.
- Combine eggs and sour cream in a large bowl; beat at medium speed with a mixer until smooth. Gradually add chocolate mixture, beating until blended.
- Stir together flour and baking soda in a small bowl; gradually add to chocolate mixture, beating until smooth. Spoon batter into prepared muffin cups.
- Bake 15 to 20 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan, and cool completely on wire racks.
- Spread or pipe Irish Cream Frosting recipe on cupcakes.
