Pesto Ranch Chicken
Broccoli Pasta
Ingredients
- 2 lb boneless, skinless chicken breasts
- ⅔ cup prepared pesto sauce
- 1 (1-oz) pkg dry Ranch dressing mix
- 1 cup chicken broth
Instructions
- Place chicken in a 4- or 6-quart slow cooker. Spread pesto over chicken. Sprinkle with dressing mix; pour broth over chicken .
- Cover and cook on Low 4 to 6 hours. Serve with pasta.
Side Dish Ingredients
- 8 oz uncooked angel hair spaghetti
- 1½ lb broccoli, cut into florets
- 2 cloves garlic, minced
- 1 Tbsp butter
- ¼ cup olive oil
- ½ cup grated Parmesan cheese, from a jar
Side Dish Instructions
- Cook spaghetti according to package directions. Reserve 1 cup hot pasta water when draining pasta.
- Sauté broccoli and garlic in butter and olive oil until tender.
- Add to cooked pasta in a large bowl.
- Sprinkle with grated Parmesan. Add small amounts of pasta water and toss until creamy.
