Pesto Ranch Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ⅔ cup prepared pesto sauce
  • 1 (1-oz) pkg dry Ranch dressing mix
  • 1 cup chicken broth

Instructions

  1. Place chicken in a 4- or 6-quart slow cooker. Spread pesto over chicken. Sprinkle with dressing mix; pour broth over chicken .
  2. Cover and cook on Low 4 to 6 hours. Serve with pasta.

Side Dish Ingredients

  • 8 oz uncooked angel hair spaghetti
  • 1½ lb broccoli, cut into florets
  • 2 cloves garlic, minced
  • 1 Tbsp butter
  • ¼ cup olive oil
  • ½ cup grated Parmesan cheese, from a jar

Side Dish Instructions

  1. Cook spaghetti according to package directions. Reserve 1 cup hot pasta water when draining pasta.
  2. Sauté broccoli and garlic in butter and olive oil until tender.
  3. Add to cooked pasta in a large bowl.
  4. Sprinkle with grated Parmesan. Add small amounts of pasta water and toss until creamy.
