Shrimp Boil

Ingredients

  • 2 (12-oz) bottles beer
  • ¾ cup Old Bay seasoning
  • 2 lemons, thinly sliced
  • 6 bay leaves
  • 2 (3-lb) bags small red potatoes
  • 2 (16-oz) pkg hickory-smoked sausage, cut into 2-inch pieces
  • 10 ears fresh corn, halved
  • 4 lb (21-to 25-count) unpeeled fresh shrimp
  • 4 lemons, cut into wedges
  • Cocktail Sauce (recipe follows)
  • Creamy Mustard Sauce (recipe follows)

Instructions

  1. Combine 7 quarts water, beer, Old Bay seasoning, lemon slices, and bay leaves in a large stockpot. Bring to a boil; reduce heat, and simmer 10 minutes.
  2. Add potatoes; return to a boil, reduce heat, and simmer 10 minutes.
  3. Add sausage and corn; return to a boil, reduce heat, and simmer 10 minutes.
  4. Add shrimp; cook 2 to 3 minutes or until shrimp just turn pink.
  5. Drain immediately; spread shrimp, sausage, potatoes and corn on newspaper-lined trays.
  6. Sprinkle with additional Old Bay, and serve with lemon wedges, if desired. Serve with Cocktail Sauce and Creamy Mustard Sauce.
