Buffalo-Ranch Chicken Taquitos

Ingredients
- ½ lb boneless skinless chicken breasts
- 3 oz cream cheese, softened
- ½ cup shredded Cheddar cheese
- 2 Tbsp buffalo wing sauce
- ¼ cup Ranch dressing, divided
- 4 small (7-inch) flour tortillas
Instructions
- Cook chicken in boiling water to cover 20 to 25 minutes or until done; cool and shred.
- Preheat oven to 425°F.
- Combine chicken, cream cheese, Cheddar, wing sauce and 2 Tbsp Ranch dressing in a bowl; stir with a wooden spoon until blended.
- Top each tortilla with about ⅓ cup chicken mixture; roll up, and place seam sides down on a baking sheet.
- Heavily spray roll-ups with cooking spray.
- Bake 14 to 15 minutes or until browned; serve with remaining Ranch dressing.
Side Dish Ingredients
- 1 (12-oz) pkg steam in bag broccoli florets
- 3 Tbsp olive oil
- ¾ tsp salt
- ½ (10-oz) container classic hummus (about ⅓ cup)
- 2 carrots, cut into sticks
- Multigrain (or other flavor) pita chips
Side Dish Instructions
- Cook broccoli 4 minutes in microwave; cool slightly.
- Combine broccoli, olive oil and salt in a small food processor; process until smooth. Stir in hummus.
- Chill until ready to serve. Serve hummus with carrots and desired amount of pita chips.
