Garlicky Tortellini with Spinach and Bacon

Ingredients

  • 2 (9-oz) pkg refrigerated cheese tortellini
  • 4 slices bacon, chopped
  • 3 Tbsp butter
  • 1 (8-oz) pkg sliced fresh mushrooms
  • 2 Tbsp minced garlic
  • 1 (5-oz) pkg baby spinach, sliced
  • ½ cup shredded Parmesan cheese

Instructions

  1. Prepare tortellini according to package directions.
  2. Meanwhile, cook bacon in a large skillet over medium heat 6 minutes or until crisp; drain on paper towels, and reserve 1 Tbsp drippings in skillet.
  3. Add butter, and stir until melted.
  4. Add mushrooms and garlic, and cook 6 minutes or until tender; gradually stir in spinach until wilted.
  5. Add pasta and bacon, tossing to coat. Top with cheese.

Side Dish Ingredients

  • 1 (16-oz) pkg baby carrots, quartered
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • 1 (16-oz) pkg frozen green peas, thawed
  • 2 green onions, thinly sliced

Side Dish Instructions

  1. Cook carrots in hot oil in a saucepan over medium-high heat 5 minutes. Stir in honey.
  2. Cook 1 minute, stirring constantly. Stir in peas and green onions.
  3. Cook 1 to 2 minutes or until peas are cooked. Season to taste.
