Garlicky Tortellini with Spinach and Bacon
Honey Peas and Carrots
Ingredients
- 2 (9-oz) pkg refrigerated cheese tortellini
- 4 slices bacon, chopped
- 3 Tbsp butter
- 1 (8-oz) pkg sliced fresh mushrooms
- 2 Tbsp minced garlic
- 1 (5-oz) pkg baby spinach, sliced
- ½ cup shredded Parmesan cheese
Instructions
- Prepare tortellini according to package directions.
- Meanwhile, cook bacon in a large skillet over medium heat 6 minutes or until crisp; drain on paper towels, and reserve 1 Tbsp drippings in skillet.
- Add butter, and stir until melted.
- Add mushrooms and garlic, and cook 6 minutes or until tender; gradually stir in spinach until wilted.
- Add pasta and bacon, tossing to coat. Top with cheese.
Side Dish Ingredients
- 1 (16-oz) pkg baby carrots, quartered
- 1 Tbsp olive oil
- 1 Tbsp honey
- 1 (16-oz) pkg frozen green peas, thawed
- 2 green onions, thinly sliced
Side Dish Instructions
- Cook carrots in hot oil in a saucepan over medium-high heat 5 minutes. Stir in honey.
- Cook 1 minute, stirring constantly. Stir in peas and green onions.
- Cook 1 to 2 minutes or until peas are cooked. Season to taste.
