One-Dish Dinner
Italian Sausage and Spaghetti Squash Bake

Ingredients
- 1 spaghetti squash (about 3 lb)
- 2 (19.5-oz) pkg spicy Italian turkey sausage, casings removed
- 1 (8-oz) pkg sliced mushrooms
- 2 large eggs, lightly beaten
- 1 (15.5-oz) jar all-natural marinara sauce
- 1 organic red bell pepper, chopped
- 1 yellow onion, chopped
- ½ tsp salt, ½ tsp pepper
- 1 (8-oz) block part-skim mozzarella cheese, shredded
- ¼ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 350°F.
- Prick spaghetti squash with a fork; microwave on High 10 to 12 minutes; let cool slightly.
- Cut in half; remove seeds. Using a fork, scrape flesh into a large bowl.
- Cook sausage in large skillet over medium-high heat until browned and crumbled; drain.
- Add mushrooms to skillet; sauté 5 minutes or until browned.
- Combine squash, sausage, mushrooms, eggs, marinara sauce, ¼ cup water, bell pepper, onion, salt and pepper; spoon mixture into a lightly greased 13- x 9-inch baking dish.
- Sprinkle with mozzarella and Parmesan cheeses.
- Bake 30 minutes or until cheese is melted and casserole is bubbly. Let stand 10 minutes before serving.
