Sloppy Joe Topped Cheese Toast
Sautéed Zucchini and Yellow Squash
Ingredients
- 1½ lb ground beef
- 1 (14.5-oz) can petite diced tomatoes
- 1¼ cups ketchup
- ½ cup barbecue sauce
- 1 Tbsp Worcestershire sauce
- 1 (8-count) pkg garlic Texas toast
- 1 (8-oz) pkg shredded mozzarella cheese
Instructions
- Cook ground beef in a large skillet over medium heat until beef is browned and crumbly; drain.
- Stir in tomatoes, ketchup, barbecue sauce, and Worcestershire sauce.
- Bring to a boil, reduce heat, and simmer 10 minutes.
- Meanwhile, bake toast according to package directions.
- Top with cheese, and bake 1 minute more or until cheese is melted.
- Place cheese toasts on serving plates and top with meat mixture.
Side Dish Ingredients
- 2 zucchini
- 2 yellow squash
- 1 Tbsp olive oil
- ½ tsp garlic salt
- ½ tsp Italian seasoning
Side Dish Instructions
- Cut each zucchini and squash lengthwise in half; cut crosswise into ½-inch pieces.
- Sauté zucchini and squash in hot oil in a large skillet over medium-high heat 5 minutes or until crisp-tender. Sprinkle with garlic salt and Italian seasoning.
