Lemonade Chicken

Parmesan Orzo and Sweet Peas and Carrots

Ingredients

  • 1 lb boneless skinless chicken breasts
  • ½ (6-oz) can frozen lemonade concentrate, thawed
  • 2 Tbsp soy sauce
  • ½ tsp garlic powder

Instructions

  1. Halve chicken breasts lengthwise. Combine all ingredients in a resealable zip-top bag; seal bag, and refrigerate at least 2 hours.
  2. Preheat oven to 375°F.
  3. Place chicken in a 13-x 9-inch baking dish. Bake 30 minutes, turning and basting chicken every 10 minutes or until golden brown.

Side Dish Ingredients

  • 2 Tbsp butter, divided
  • 2 cloves garlic, minced
  • ½ cup uncooked orzo
  • 1 cup chicken broth
  • ¼ cup freshly grated Parmesan cheese
  • ½ (12-oz) bag frozen peas and carrots

Side Dish Instructions

  1. Melt butter in a medium skillet; add garlic, cook 1 minute. Add orzo, and stir until browned.
  2. Add chicken broth and bring to a boil. Reduce heat and cover. Cook 15 minutes or until pasta is tender and liquid is absorbed.
  3. Toss Parmesan with cooked orzo. Salt and pepper to taste.
  4. Microwave peas and carrots according to package directions; season as desired.
