Lemonade Chicken
Parmesan Orzo and Sweet Peas and Carrots
Ingredients
- 1 lb boneless skinless chicken breasts
- ½ (6-oz) can frozen lemonade concentrate, thawed
- 2 Tbsp soy sauce
- ½ tsp garlic powder
Instructions
- Halve chicken breasts lengthwise. Combine all ingredients in a resealable zip-top bag; seal bag, and refrigerate at least 2 hours.
- Preheat oven to 375°F.
- Place chicken in a 13-x 9-inch baking dish. Bake 30 minutes, turning and basting chicken every 10 minutes or until golden brown.
Side Dish Ingredients
- 2 Tbsp butter, divided
- 2 cloves garlic, minced
- ½ cup uncooked orzo
- 1 cup chicken broth
- ¼ cup freshly grated Parmesan cheese
- ½ (12-oz) bag frozen peas and carrots
Side Dish Instructions
- Melt butter in a medium skillet; add garlic, cook 1 minute. Add orzo, and stir until browned.
- Add chicken broth and bring to a boil. Reduce heat and cover. Cook 15 minutes or until pasta is tender and liquid is absorbed.
- Toss Parmesan with cooked orzo. Salt and pepper to taste.
- Microwave peas and carrots according to package directions; season as desired.
