Tomato and Spinach Soup

Ingredients

  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • ½ yellow onion, chopped
  • 1½ tsp Italian seasoning
  • ¼ tsp crushed red pepper
  • 1½ cups organic vegetable broth
  • 1 (14.5-oz) can BPA-free diced tomatoes, undrained
  • 1 (5-oz) pkg organic baby spinach, chopped
  • ½ tsp salt

Instructions

  1. Heat oil in a large saucepan over medium heat; add garlic and onion.
  2. Sauté 5 minutes or until tender; stir in Italian seasoning, crushed red pepper, broth and tomatoes.
  3. Bring to a boil; add spinach and salt. Reduce heat, and simmer 30 minutes or until soup is slightly thickened.

Side Dish Ingredients

  • 2 Tbsp butter
  • 4 slices whole-grain bread
  • ½ cup shredded sharp Cheddar cheese
  • 2 large basil leaves

Side Dish Instructions

  1. Melt butter in a large skillet over medium-high heat.
  2. Top 2 bread slices with cheese and basil leaves; cover with remaining bread slices.
  3. Cook sandwiches in melted butter in skillet until golden and cheese is melted.
