Tomato and Spinach Soup
Grilled Cheese Sandwiches with Basil
Ingredients
- 2 Tbsp olive oil
- 1 clove garlic, minced
- ½ yellow onion, chopped
- 1½ tsp Italian seasoning
- ¼ tsp crushed red pepper
- 1½ cups organic vegetable broth
- 1 (14.5-oz) can BPA-free diced tomatoes, undrained
- 1 (5-oz) pkg organic baby spinach, chopped
- ½ tsp salt
Instructions
- Heat oil in a large saucepan over medium heat; add garlic and onion.
- Sauté 5 minutes or until tender; stir in Italian seasoning, crushed red pepper, broth and tomatoes.
- Bring to a boil; add spinach and salt. Reduce heat, and simmer 30 minutes or until soup is slightly thickened.
Side Dish Ingredients
- 2 Tbsp butter
- 4 slices whole-grain bread
- ½ cup shredded sharp Cheddar cheese
- 2 large basil leaves
Side Dish Instructions
- Melt butter in a large skillet over medium-high heat.
- Top 2 bread slices with cheese and basil leaves; cover with remaining bread slices.
- Cook sandwiches in melted butter in skillet until golden and cheese is melted.
