Baked Lemon-Basil Cod
Orzo with Tomato and ZucchiniIngredients
- ¾ lb cod fillets
- ¼ tsp salt, ¼ tsp pepper
- 1 lemon
- 2 Tbsp butter, softened
- 2 Tbsp chopped fresh basil
- 1 clove garlic, minced
Instructions
- Preheat oven to 400°F.
- Place cod in a baking dish, and sprinkle with salt and pepper.
- Grate rind from lemon to equal 2 tsp. Combine with butter, basil and garlic.
- Dollop butter mixture evenly over fish. Squeeze lemon juice over fish.
- Bake 10 to 12 minutes or until fish flakes with a fork.

- ½ (12-oz) pkg whole wheat orzo
- 1 Tbsp olive oil
- 1 tomato, chopped
- 1 small zucchini, chopped
- ¼ cup crumbled feta cheese
- ¼ tsp salt, ¼ tsp pepper
Side Dish Instructions
- Prepare orzo according to package directions; drain and keep warm.
- Heat oil in a large skillet over medium heat. Add tomato and zucchini; sauté 5 minutes or until tender.
- Remove from heat; stir in cooked orzo, feta, salt and pepper.
