Baked Lemon-Basil Cod

Ingredients

  • ¾ lb cod fillets
  • ¼ tsp salt, ¼ tsp pepper
  • 1 lemon
  • 2 Tbsp butter, softened
  • 2 Tbsp chopped fresh basil
  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 400°F.
  2. Place cod in a baking dish, and sprinkle with salt and pepper.
  3. Grate rind from lemon to equal 2 tsp. Combine with butter, basil and garlic.
  4. Dollop butter mixture evenly over fish. Squeeze lemon juice over fish.
  5. Bake 10 to 12 minutes or until fish flakes with a fork.

  • ½ (12-oz) pkg whole wheat orzo
  • 1 Tbsp olive oil
  • 1 tomato, chopped
  • 1 small zucchini, chopped
  • ¼ cup crumbled feta cheese
  • ¼ tsp salt, ¼ tsp pepper

Side Dish Instructions

  1. Prepare orzo according to package directions; drain and keep warm.
  2. Heat oil in a large skillet over medium heat. Add tomato and zucchini; sauté 5 minutes or until tender.
  3. Remove from heat; stir in cooked orzo, feta, salt and pepper.
