Skillet Lemon-Pepper Fish
Homemade Rice Pilaf and Steamed Green Beans
Ingredients
- 4 Tbsp butter
- 6 tilapia fillets (or use fresh or frozen cod)
- 1 Tbsp lemon-pepper seasoning
Instructions
- Melt half of butter in a large nonstick skillet over medium-high heat.
- Sprinkle fish fillets with lemon pepper.
- Place 3 fillets in skillet; cook 4 minutes, and flip carefully.
- Cook 3 minutes longer or until fish flakes with a fork.
- Repeat with remaining butter and fillets.
Side Dish Ingredients
- 3 oz uncooked thin spaghetti, broken into small pieces to yield ½ cup
- 2 Tbsp butter
- ¾ cup uncooked long-grain rice
- 1 (14½-oz) can chicken broth
- 2 (12-oz) steam-in-bags green beans
Side Dish Instructions
- Sauté spaghetti in butter in a medium skillet, stirring until browned.
- Add rice, and stir until well coated with butter.
- Slowly add broth, and simmer until liquid is absorbed.
- Microwave both bags green beans according to package directions; season to taste.
