Skillet Lemon-Pepper Fish

Homemade Rice Pilaf and Steamed Green Beans

Ingredients

  • 4 Tbsp butter
  • 6 tilapia fillets (or use fresh or frozen cod)
  • 1 Tbsp lemon-pepper seasoning

Instructions

  1. Melt half of butter in a large nonstick skillet over medium-high heat.
  2. Sprinkle fish fillets with lemon pepper.
  3. Place 3 fillets in skillet; cook 4 minutes, and flip carefully.
  4. Cook 3 minutes longer or until fish flakes with a fork.
  5. Repeat with remaining butter and fillets.

Side Dish Ingredients

  • 3 oz uncooked thin spaghetti, broken into small pieces to yield ½ cup
  • 2 Tbsp butter
  • ¾ cup uncooked long-grain rice
  • 1 (14½-oz) can chicken broth
  • 2 (12-oz) steam-in-bags green beans

Side Dish Instructions

  1. Sauté spaghetti in butter in a medium skillet, stirring until browned.
  2. Add rice, and stir until well coated with butter.
  3. Slowly add broth, and simmer until liquid is absorbed.
  4. Microwave both bags green beans according to package directions; season to taste.
