Beefy Paleo Nachos

Ingredients

  • 1½ lb 93% lean ground beef
  • 3 cloves garlic, minced
  • 1 cup refrigerated salsa
  • 2 Tbsp Mexican seasoning
  • 1 pint grape tomatoes, quartered
  • 2 avocados, pitted and diced
  • ¼ cup chopped fresh cilantro
  • Sliced jalapeño peppers (optional)

Instructions

  1. Cook ground beef and garlic in a large skillet over medium heat 10 minutes or until no longer pink; drain and return to skillet.
  2. Stir in salsa and seasoning. Cook, stirring often, over medium heat until thickened.
  3. Serve beef mixture over Sweet Potato Chips with tomatoes, avocado, cilantro, and peppers, if using.

  • 2 lb sweet potatoes
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Using a mandoline or a sharp knife, thinly slice sweet potatoes.
  3. Toss together potatoes and oil on rimmed baking sheets; arrange in a single layer on pans.
  4. Sprinkle with 1 tsp each salt and pepper.
  5. Bake 25 to 35 minutes or until edges are browned and potatoes are crisp. Cool on wire racks.
