Beefy Paleo Nachos
Sweet Potato Chips
Ingredients
- 1½ lb 93% lean ground beef
- 3 cloves garlic, minced
- 1 cup refrigerated salsa
- 2 Tbsp Mexican seasoning
- 1 pint grape tomatoes, quartered
- 2 avocados, pitted and diced
- ¼ cup chopped fresh cilantro
- Sliced jalapeño peppers (optional)
Instructions
- Cook ground beef and garlic in a large skillet over medium heat 10 minutes or until no longer pink; drain and return to skillet.
- Stir in salsa and seasoning. Cook, stirring often, over medium heat until thickened.
- Serve beef mixture over Sweet Potato Chips with tomatoes, avocado, cilantro, and peppers, if using.
Side Dish Ingredients
- 2 lb sweet potatoes
- 2 Tbsp olive oil
Side Dish Instructions
- Preheat oven to 400°F.
- Using a mandoline or a sharp knife, thinly slice sweet potatoes.
- Toss together potatoes and oil on rimmed baking sheets; arrange in a single layer on pans.
- Sprinkle with 1 tsp each salt and pepper.
- Bake 25 to 35 minutes or until edges are browned and potatoes are crisp. Cool on wire racks.
