Hawaiian Turkey Meat Loaf

Parmesan Mashed Potatoes and Thin Green Beans

Ingredients

  • 2 lb ground turkey
  • 1 cup panko breadcrumbs
  • ½ cup plus 3 Tbsp barbecue sauce, divided
  • ¼ cup chopped fresh parsley
  • 1 large egg, lightly beaten
  • 1 tsp ground ginger
  • 1 (20-oz) can pineapple slices, drained

Instructions

  1. Preheat oven to 350°F.
  2. Combine ground turkey, panko, 3 Tbsp barbecue sauce, parsley, egg, ginger, 1¼ tsp salt and ¾ tsp pepper in a large bowl; press mixture into a 10-inch loaf, and place on a rimmed baking sheet.
  3. Brush top of meat loaf with ¼ cup barbecue sauce. Press pineapple rings into top of loaf.
  4. Bake 1 hour.
  5. Brush top of loaf with remaining ¼ cup barbecue sauce; bake 15 minutes longer or until a meat thermometer inserted in center reads at least 165°F.
  6. Sprinkle with additional parsley, if desired.

Side Dish Ingredients

  • 2 lb russet potatoes, peeled and cubed
  • ¼ cup butter, softened
  • ½ to 1 cup milk
  • 1 cup shredded or grated Parmesan cheese
  • 1 (16-oz) pkg frozen extra fine green beans

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a saucepan; cook 15 minutes or until tender. Drain.
  2. Melt butter in pan over low heat; stir in potatoes and ½ cup milk.
  3. Smash potatoes with enough remaining milk to reach desired consistency.
  4. Stir in cheese and salt and pepper to taste.
  5. Steam beans according to package directions.
