Hawaiian Turkey Meat Loaf
Parmesan Mashed Potatoes and Thin Green Beans
Ingredients
- 2 lb ground turkey
- 1 cup panko breadcrumbs
- ½ cup plus 3 Tbsp barbecue sauce, divided
- ¼ cup chopped fresh parsley
- 1 large egg, lightly beaten
- 1 tsp ground ginger
- 1 (20-oz) can pineapple slices, drained
Instructions
- Preheat oven to 350°F.
- Combine ground turkey, panko, 3 Tbsp barbecue sauce, parsley, egg, ginger, 1¼ tsp salt and ¾ tsp pepper in a large bowl; press mixture into a 10-inch loaf, and place on a rimmed baking sheet.
- Brush top of meat loaf with ¼ cup barbecue sauce. Press pineapple rings into top of loaf.
- Bake 1 hour.
- Brush top of loaf with remaining ¼ cup barbecue sauce; bake 15 minutes longer or until a meat thermometer inserted in center reads at least 165°F.
- Sprinkle with additional parsley, if desired.

- 2 lb russet potatoes, peeled and cubed
- ¼ cup butter, softened
- ½ to 1 cup milk
- 1 cup shredded or grated Parmesan cheese
- 1 (16-oz) pkg frozen extra fine green beans
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a saucepan; cook 15 minutes or until tender. Drain.
- Melt butter in pan over low heat; stir in potatoes and ½ cup milk.
- Smash potatoes with enough remaining milk to reach desired consistency.
- Stir in cheese and salt and pepper to taste.
- Steam beans according to package directions.
