Hawaiian Turkey Meat Loaf
Parmesan Mashed Potatoes and Thin Green BeansIngredients
- 1 lb ground turkey
- ¾ cup panko breadcrumbs
- ¼ cup plus 1½ Tbsp barbecue sauce, divided
- 1 large egg, lightly beaten
- ½ tsp ground ginger
- 1 (20-oz) can pineapple slices, drained
Instructions
- Preheat oven to 350°F.
- Combine ground turkey, panko, 1½ Tbsp barbecue sauce, egg, ginger, ½ tsp salt and ¼ tsp pepper in a large bowl; press mixture into a 6-inch loaf, and place on a rimmed baking sheet.
- Brush top with 2 Tbsp barbecue sauce. Press pineapple rings into top of loaf.
- Bake 35 to 45 minutes.
- Brush top of loaf with remaining 2 Tbsp barbecue sauce; bake 15 minutes longer or until a meat thermometer inserted in center reads at least 165°F.

- ½ lb russet potatoes, peeled and cubed
- 1 Tbsp butter
- ⅓ cup milk
- 3 Tbsp shredded or grated Parmesan cheese
- ½ (16-oz) pkg frozen extra fine green beans
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a saucepan; cook 15 minutes or until tender. Drain.
- Melt butter in pan over low heat; stir in potatoes and milk.
- Smash potatoes to reach desired consistency, adding additional milk if needed.
- Stir in cheese and salt and pepper to taste.
- Steam beans according to package directions.
