Sage Pork Chops

Balsamic Greens with Sautéed Pear

Ingredients

  • 2 pork loin chops
  • 1 Tbsp olive oil
  • ½ tsp dry rubbed sage

Instructions

  1. Rub pork chops with oil; sprinkle with sage and lightly season with salt and pepper.
  2. Heat a nonstick skillet over medium-high heat; add pork chops.
  3. Cook 4 to 5 minutes per side or until pork chops are done.

Side Dish Ingredients

  • 1 Tbsp olive oil
  • 1 pear, peeled, cored and sliced
  • 2 Tbsp balsamic vinegar, divided
  • 1 clove garlic, minced
  • 1 lb organic turnip or collard greens, trimmed and chopped
  • 2 Tbsp low-sodium chicken broth

Side Dish Instructions

  1. Heat oil in a Dutch oven over medium-high heat; add pear.
  2. Sauté 5 minutes or until pear begins to brown; add 1 Tbsp water and 1 Tbsp vinegar.
  3. Cook 2 minutes or until pear is tender; remove and keep warm.
  4. Add garlic and greens to Dutch oven; cook 5 minutes or until greens begin to wilt.
  5. Add broth, remaining 1 Tbsp vinegar, and salt and pepper to taste; cook 5 minutes longer or until greens are tender.
