Sage Pork Chops
Balsamic Greens with Sautéed Pear
Ingredients
- 2 pork loin chops
- 1 Tbsp olive oil
- ½ tsp dry rubbed sage
Instructions
- Rub pork chops with oil; sprinkle with sage and lightly season with salt and pepper.
- Heat a nonstick skillet over medium-high heat; add pork chops.
- Cook 4 to 5 minutes per side or until pork chops are done.
Side Dish Ingredients
- 1 Tbsp olive oil
- 1 pear, peeled, cored and sliced
- 2 Tbsp balsamic vinegar, divided
- 1 clove garlic, minced
- 1 lb organic turnip or collard greens, trimmed and chopped
- 2 Tbsp low-sodium chicken broth
Side Dish Instructions
- Heat oil in a Dutch oven over medium-high heat; add pear.
- Sauté 5 minutes or until pear begins to brown; add 1 Tbsp water and 1 Tbsp vinegar.
- Cook 2 minutes or until pear is tender; remove and keep warm.
- Add garlic and greens to Dutch oven; cook 5 minutes or until greens begin to wilt.
- Add broth, remaining 1 Tbsp vinegar, and salt and pepper to taste; cook 5 minutes longer or until greens are tender.
