Polenta with Spicy Meat Sauce

Arugula and Cucumber Salad with Honey-Lemon Dressing

Ingredients

  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 lb ground sirloin
  • ½ tsp dried oregano
  • ¼ tsp cayenne pepper
  • 1 (24.5-oz) jar low-sodium marinara sauce
  • 2 (18-oz) tubes polenta, cut into 9 slices each
  • 6 Tbsp chopped fresh basil
  • 6 Tbsp grated Parmesan cheese

Instructions

  1. Sauté onion and garlic in hot oil in a large saucepan over medium-high heat 2 minutes.
  2. Add beef, oregano, ¼ tsp salt and cayenne pepper; cook 6 minutes or until beef is browned, stirring to crumble. Stir in marinara sauce; bring to a boil, and let simmer.
  3. Meanwhile, cook polenta, in two batches, in a large nonstick skillet coated with cooking spray over medium-high heat 4 to 5 minutes per side or until crisp and slightly brown.
  4. Place 3 slices polenta on each of 6 plates. Top with meat sauce. Sprinkle each serving with 1 Tbsp basil and 1 Tbsp cheese.

Side Dish Ingredients

  • 1½ Tbsp fresh lemon juice
  • 1½ Tbsp honey
  • 1½ tsp Dijon mustard
  • ¼ cup olive oil
  • 1 (5-oz) pkg arugula
  • ½ seedless cucumber, thinly sliced

Side Dish Instructions

  1. Whisk together lemon juice, honey, mustard and ½ tsp salt in a salad bowl. Gradually whisk in oil.
  2. Add arugula and cucumber; toss.
