Polenta with Spicy Meat Sauce
Arugula and Cucumber Salad with Honey-Lemon DressingIngredients
- 1 cup chopped onion
- 3 cloves garlic, minced
- 1 Tbsp olive oil
- 1 lb ground sirloin
- ½ tsp dried oregano
- ¼ tsp cayenne pepper
- 1 (24.5-oz) jar low-sodium marinara sauce
- 2 (18-oz) tubes polenta, cut into 9 slices each
- 6 Tbsp chopped fresh basil
- 6 Tbsp grated Parmesan cheese
Instructions
- Sauté onion and garlic in hot oil in a large saucepan over medium-high heat 2 minutes.
- Add beef, oregano, ¼ tsp salt and cayenne pepper; cook 6 minutes or until beef is browned, stirring to crumble. Stir in marinara sauce; bring to a boil, and let simmer.
- Meanwhile, cook polenta, in two batches, in a large nonstick skillet coated with cooking spray over medium-high heat 4 to 5 minutes per side or until crisp and slightly brown.
- Place 3 slices polenta on each of 6 plates. Top with meat sauce. Sprinkle each serving with 1 Tbsp basil and 1 Tbsp cheese.
Side Dish Ingredients
- 1½ Tbsp fresh lemon juice
- 1½ Tbsp honey
- 1½ tsp Dijon mustard
- ¼ cup olive oil
- 1 (5-oz) pkg arugula
- ½ seedless cucumber, thinly sliced
Side Dish Instructions
- Whisk together lemon juice, honey, mustard and ½ tsp salt in a salad bowl. Gradually whisk in oil.
- Add arugula and cucumber; toss.
