Baked Spaghetti and Meatballs

Ingredients

  • ¾ lb ground round
  • 1 Tbsp olive oil
  • 1 (24-oz) jar all-natural homemade marinara sauce
  • ½ tsp dried Italian seasoning
  • 6 oz whole wheat spaghetti, broken in half
  • 1 (4-oz) pkg fresh mozzarella cheese, thinly sliced
  • ¼ cup fresh basil leaves

Instructions

  1. Preheat oven to 400°F; lightly grease an 8-inch baking dish.
  2. Shape the ground round into meatballs and brown in 1 Tbsp hot oil in a nonstick skillet.
  3. Whisk together marinara sauce, ½ cup water, and Italian seasoning in baking dish. Add uncooked spaghetti, stirring to coat with sauce.
  4. Arrange meatballs over spaghetti.
  5. Cover and bake 50 to 60 minutes, stirring halfway through baking time, until pasta is tender. Uncover, stir again, and top with cheese.
  6. Increase oven temp to broil. Broil 4 to 5 minutes or until cheese is melted and beginning to brown.
  7. Top with basil.

Side Dish Ingredients

  • 1 romaine heart, cut in half
  • ½ cup organic grape tomatoes, cut in half
  • ¼ cup freshly grated Parmesan cheese
  • 1½ Tbsp olive oil
  • 1½ tsp red wine vinegar
  • 1 clove garlic, minced
  • 1 Tbsp chopped fresh parsley

Side Dish Instructions

  1. Arrange romaine pieces on salad plates.
  2. Top evenly with tomatoes and cheese.
  3. Combine oil, vinegar, garlic and salt and pepper to taste in a small bowl, stirring with a whisk.
  4. Drizzle dressing over salads; sprinkle with parsley.
