Baked Spaghetti and Meatballs
Romaine Heart with Parmesan
Ingredients
- ¾ lb ground round
- 1 Tbsp olive oil
- 1 (24-oz) jar all-natural homemade marinara sauce
- ½ tsp dried Italian seasoning
- 6 oz whole wheat spaghetti, broken in half
- 1 (4-oz) pkg fresh mozzarella cheese, thinly sliced
- ¼ cup fresh basil leaves
Instructions
- Preheat oven to 400°F; lightly grease an 8-inch baking dish.
- Shape the ground round into meatballs and brown in 1 Tbsp hot oil in a nonstick skillet.
- Whisk together marinara sauce, ½ cup water, and Italian seasoning in baking dish. Add uncooked spaghetti, stirring to coat with sauce.
- Arrange meatballs over spaghetti.
- Cover and bake 50 to 60 minutes, stirring halfway through baking time, until pasta is tender. Uncover, stir again, and top with cheese.
- Increase oven temp to broil. Broil 4 to 5 minutes or until cheese is melted and beginning to brown.
- Top with basil.
Side Dish Ingredients
- 1 romaine heart, cut in half
- ½ cup organic grape tomatoes, cut in half
- ¼ cup freshly grated Parmesan cheese
- 1½ Tbsp olive oil
- 1½ tsp red wine vinegar
- 1 clove garlic, minced
- 1 Tbsp chopped fresh parsley
Side Dish Instructions
- Arrange romaine pieces on salad plates.
- Top evenly with tomatoes and cheese.
- Combine oil, vinegar, garlic and salt and pepper to taste in a small bowl, stirring with a whisk.
- Drizzle dressing over salads; sprinkle with parsley.
