Feta-Roasted Red Pepper Sandwiches
Marinated Cucumbers
Ingredients
- ½ cup crumbled feta cheese
- 1 Tbsp olive oil
- 1 roasted red bell pepper, patted dry
- 1 small clove garlic
- 4 (1.5-oz) slices country sourdough bread
- 1 cup baby spinach
- 1 small tomato, cut into 4 slices
Instructions
- Pulse feta, oil, bell pepper and garlic in a mini chopper until blended.
- Toast bread slices.
- Spread cheese mixture over 2 bread slices. Top with spinach and tomatoes. Cover with remaining bread slices.
Side Dish Ingredients
- 1 small seedless cucumber, seeded and sliced
- 1 Tbsp red wine vinegar
- 1 tsp olive oil
- ¼ tsp sugar
Side Dish Instructions
- Toss together all ingredients and ⅛ tsp each salt and pepper in a small bowl. Cover and chill until ready to serve.
