Feta-Roasted Red Pepper Sandwiches

Ingredients

  • ½ cup crumbled feta cheese
  • 1 Tbsp olive oil
  • 1 roasted red bell pepper, patted dry
  • 1 small clove garlic
  • 4 (1.5-oz) slices country sourdough bread
  • 1 cup baby spinach
  • 1 small tomato, cut into 4 slices

Instructions

  1. Pulse feta, oil, bell pepper and garlic in a mini chopper until blended.
  2. Toast bread slices.
  3. Spread cheese mixture over 2 bread slices. Top with spinach and tomatoes. Cover with remaining bread slices.

Side Dish Ingredients

  • 1 small seedless cucumber, seeded and sliced
  • 1 Tbsp red wine vinegar
  • 1 tsp olive oil
  • ¼ tsp sugar

Side Dish Instructions

  1. Toss together all ingredients and ⅛ tsp each salt and pepper in a small bowl. Cover and chill until ready to serve.
