Mexican Street Corn
Ingredients
- 10 ears corn on the cob, husks removed
- ½ cup finely crumbled cotija cheese (or use feta cheese)
- ¼ cup mayonnaise
- ¼ cup sour cream
- 1 Tbsp fresh lime juice
- ½ tsp garlic powder
- ¼ tsp chili powder
- ½ cup chopped fresh cilantro
- Garnish: chili powder
Instructions
- Preheat grill or grill pan to medium-high heat .
- Grill corn, covered with grill lid, 15 minutes, turning frequently, until corn is browned and tender.
- Meanwhile, stir together cheese, mayonnaise, sour cream, lime juice, garlic powder, and chili powder in a small bowl.
- Brush mixture over corn; sprinkle with cilantro, and, if desired, garnish with additional chili powder. Serve immediately.
