Cajun "Barbecue" Shrimp
Cauliflower Rice with Bacon
Ingredients
- 1½ lb large raw shrimp, peeled and deveined (or use catfish, cut into 2-inch pieces)
- 1 Tbsp olive oil
- ¼ cup fresh lemon juice
- 2 cloves garlic, minced
- 3 Tbsp Cajun seasoning
- 2 Tbsp soy sauce
- ½ tsp hot sauce
- 1 lemon, thinly sliced (optional)
Instructions
- Preheat oven to 400°F. Place shrimp in a 13- x 9-inch baking dish.
- Combine oil, lemon juice, garlic, seasoning, soy sauce, hot sauce and ¼ tsp pepper. Pour over shrimp; toss well to combine.
- Bake 10 minutes or until shrimp turn pink; garnish with lemon slices, if desired.
Side Dish Ingredients
- 4 slices bacon
- 1 head cauliflower, cut into florets
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 1 (14.5-oz) can chicken broth
- ½ tsp onion powder
Side Dish Instructions
- Place bacon on a paper towel-lined plate; microwave on HIGH 3 minutes or until crispy.
- Pulse cauliflower in a food processor until rice-like consistency.
- Sauté garlic in hot oil in a saucepan over medium-high heat 1 minute or until golden; add cauliflower. Cook 2 minutes. Stir in broth; cover and cook 15 minutes or until cauliflower is tender. Add onion powder; season with salt and pepper to taste. Stir in bacon.
