Cajun "Barbecue" Shrimp

Ingredients

  • 1½ lb large raw shrimp, peeled and deveined (or use catfish, cut into 2-inch pieces)
  • 1 Tbsp olive oil
  • ¼ cup fresh lemon juice
  • 2 cloves garlic, minced
  • 3 Tbsp Cajun seasoning
  • 2 Tbsp soy sauce
  • ½ tsp hot sauce
  • 1 lemon, thinly sliced (optional)

Instructions

  1. Preheat oven to 400°F. Place shrimp in a 13- x 9-inch baking dish.
  2. Combine oil, lemon juice, garlic, seasoning, soy sauce, hot sauce and ¼ tsp pepper. Pour over shrimp; toss well to combine.
  3. Bake 10 minutes or until shrimp turn pink; garnish with lemon slices, if desired.

Side Dish Ingredients

  • 4 slices bacon
  • 1 head cauliflower, cut into florets
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 (14.5-oz) can chicken broth
  • ½ tsp onion powder

Side Dish Instructions

  1. Place bacon on a paper towel-lined plate; microwave on HIGH 3 minutes or until crispy.
  2. Pulse cauliflower in a food processor until rice-like consistency.
  3. Sauté garlic in hot oil in a saucepan over medium-high heat 1 minute or until golden; add cauliflower. Cook 2 minutes. Stir in broth; cover and cook 15 minutes or until cauliflower is tender. Add onion powder; season with salt and pepper to taste. Stir in bacon.
