Oven Baked Ham and Cheese Omelet
Green Salad with Grapes and Pecans
Ingredients
- 2 Tbsp butter
- 6 oz deli ham, diced
- ½ cup chopped onion
- 6 large eggs
- ¼ cup sour cream
- 1 tomato, seeded and chopped
- ½ cup shredded Cheddar cheese
Instructions
- Preheat oven to 350°F. Melt butter in a 6- to 8-inch ovensafe skillet over medium heat. Add ham and onion; cook, stirring occasionally, 5 minutes. Stir in ¼ tsp each salt and pepper.
- Beat eggs and sour cream in a large bowl with a mixer at medium speed until smooth; pour over ham mixture.
- Bake 10 minutes; sprinkle with tomatoes and cheese. Bake 10 minutes longer or until set. Cut into wedges to serve.
Side Dish Ingredients
- ½ head romaine lettuce, chopped
- ¼ cup halved seedless red grapes
- ¼ cup chopped pecans, toasted
- 2 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- 1 tsp honey
- ½ tsp Dijon mustard
Side Dish Instructions
- Combine lettuce, grapes, and pecans in a bowl. Whisk together oil, vinegar, honey, and mustard. Drizzle dressing over salad, tossing to coat. Season to taste with salt and pepper.
