Oven Baked Ham and Cheese Omelet

Ingredients

  • 2 Tbsp butter
  • 6 oz deli ham, diced
  • ½ cup chopped onion
  • 6 large eggs
  • ¼ cup sour cream
  • 1 tomato, seeded and chopped
  • ½ cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350°F. Melt butter in a 6- to 8-inch ovensafe skillet over medium heat. Add ham and onion; cook, stirring occasionally, 5 minutes. Stir in ¼ tsp each salt and pepper.
  2. Beat eggs and sour cream in a large bowl with a mixer at medium speed until smooth; pour over ham mixture.
  3. Bake 10 minutes; sprinkle with tomatoes and cheese. Bake 10 minutes longer or until set. Cut into wedges to serve.

Side Dish Ingredients

  • ½ head romaine lettuce, chopped
  • ¼ cup halved seedless red grapes
  • ¼ cup chopped pecans, toasted
  • 2 Tbsp olive oil
  • 1 Tbsp apple cider vinegar
  • 1 tsp honey
  • ½ tsp Dijon mustard

Side Dish Instructions

  1. Combine lettuce, grapes, and pecans in a bowl. Whisk together oil, vinegar, honey, and mustard. Drizzle dressing over salad, tossing to coat. Season to taste with salt and pepper.
