Pizza Potatoes
Spring Mix-Cucumber Salad
Ingredients
- 3 lb russet potatoes
- 1¼ cups low-sodium marinara sauce
- 1 oz turkey pepperoni slices, coarsely chopped
- 1¼ cups shredded part-skim mozzarella cheese
- 1 large green bell pepper, finely chopped
- ¼ cup chopped fresh basil
Instructions
- Preheat oven to 400°F. Cut a small slice from 1 long side of each potato to make a flat base. Place potatoes, cut sides down, on cutting board. Cut lengthwise into ½-inch slices.
- Spread potatoes on 2 large foil-lined baking sheets. Lightly coat both sides with cooking spray, and sprinkle with ½ tsp salt.
- Bake 8 minutes. Turn potatoes, and bake 7 minutes or until tender.
- Spoon marinara sauce over potatoes, and top with pepperoni, cheese and bell pepper.
- Bake 3 minutes or until cheese melts slightly. Remove from oven, and sprinkle with basil. Let stand 5 minutes.
Side Dish Ingredients
- 3 Tbsp olive oil
- 3 Tbsp apple cider vinegar
- 1½ tsp honey
- ½ tsp Worcestershire sauce
- 1 (6-oz) pkg spring mix
- 1 cucumber, thinly sliced
- ½ red onion, chopped
Side Dish Instructions
- Whisk together oil, vinegar, honey, Worcestershire sauce and ½ tsp salt in a bowl.
- Add spring mix, cucumber and onion, and toss.
