Pizza Potatoes

Spring Mix-Cucumber Salad

Ingredients

  • 3 lb russet potatoes
  • 1¼ cups low-sodium marinara sauce
  • 1 oz turkey pepperoni slices, coarsely chopped
  • 1¼ cups shredded part-skim mozzarella cheese
  • 1 large green bell pepper, finely chopped
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat oven to 400°F. Cut a small slice from 1 long side of each potato to make a flat base. Place potatoes, cut sides down, on cutting board. Cut lengthwise into ½-inch slices.
  2. Spread potatoes on 2 large foil-lined baking sheets. Lightly coat both sides with cooking spray, and sprinkle with ½ tsp salt.
  3. Bake 8 minutes. Turn potatoes, and bake 7 minutes or until tender.
  4. Spoon marinara sauce over potatoes, and top with pepperoni, cheese and bell pepper.
  5. Bake 3 minutes or until cheese melts slightly. Remove from oven, and sprinkle with basil. Let stand 5 minutes.

Side Dish Ingredients

  • 3 Tbsp olive oil
  • 3 Tbsp apple cider vinegar
  • 1½ tsp honey
  • ½ tsp Worcestershire sauce
  • 1 (6-oz) pkg spring mix
  • 1 cucumber, thinly sliced
  • ½ red onion, chopped

Side Dish Instructions

  1. Whisk together oil, vinegar, honey, Worcestershire sauce and ½ tsp salt in a bowl.
  2. Add spring mix, cucumber and onion, and toss.
