Cajun Beef Chili
Spicy Sweet Potato Fries
Ingredients
- 3 lb beef stew meat
- 1 tsp Cajun seasoning
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 4 cloves garlic, minced
- 1 (14.5-oz) can organic diced tomatoes
- 1 (14.5-oz) can organic beef broth
Instructions
- Sprinkle beef evenly with Cajun seasoning and ½ tsp pepper.
- Combine onion, bell pepper and garlic in a 5- to 7-quart slow cooker. Place beef on top of vegetables. Pour tomatoes and broth over beef.
- Cover and cook on LOW 6 hours or until beef is done.
Side Dish Ingredients
- 2 large sweet potatoes, peeled
- 3 Tbsp avocado oil
- ¼ tsp cayenne pepper
- 2 cloves garlic, minced
Side Dish Instructions
- Preheat oven to 450°F.
- Cut sweet potatoes into ½-inch-thick wedges.
- Combine potato wedges, oil, 1 tsp salt, 1 tsp paprika, cayenne pepper and garlic on a large rimmed bakin sheet; spread in a single layer.
- Bake 30 minutes, stirring once, or until tender.
