Cajun Beef Chili

Ingredients

  • 3 lb beef stew meat
  • 1 tsp Cajun seasoning
  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 (14.5-oz) can organic diced tomatoes
  • 1 (14.5-oz) can organic beef broth

Instructions

  1. Sprinkle beef evenly with Cajun seasoning and ½ tsp pepper.
  2. Combine onion, bell pepper and garlic in a 5- to 7-quart slow cooker. Place beef on top of vegetables. Pour tomatoes and broth over beef.
  3. Cover and cook on LOW 6 hours or until beef is done.

Side Dish Ingredients

  • 2 large sweet potatoes, peeled
  • 3 Tbsp avocado oil
  • ¼ tsp cayenne pepper
  • 2 cloves garlic, minced

Side Dish Instructions

  1. Preheat oven to 450°F.
  2. Cut sweet potatoes into ½-inch-thick wedges.
  3. Combine potato wedges, oil, 1 tsp salt, 1 tsp paprika, cayenne pepper and garlic on a large rimmed bakin sheet; spread in a single layer.
  4. Bake 30 minutes, stirring once, or until tender.
