One Dish Dinner
Roasted Chicken with Apples and Thyme
Ingredients
- 1 (5-lb) whole chicken, giblets removed
- 3 Tbsp avocado oil (or use coconut oil), divided
- 4 apples
- 6 cloves garlic
- 12 sprigs fresh thyme, divided
- 1 lb Brussels sprouts, halved
- 8 carrots, cut into 3-inch sticks
Instructions
- Preheat oven to 400°F.
- Place chicken in a very large cast-iron skillet or other ovenproof skillet or roasting pan.
- Rub chicken all over with 1 Tbsp oil; season with salt and pepper.
- Quarter 1 apple; slice remaining apples.
- Stuff chicken cavity with quartered apple, garlic, and 6 sprigs thyme; tie legs together with butcher's twine.
- Bake chicken 30 minutes.
- Remove chicken from oven; carefully arrange sliced apples, Brussels sprouts, carrots, and thyme around chicken.
- Drizzle vegetables with remaining 2 Tbsp oil.
- Bake 30 to 45 minutes or until a thermometer inserted in thickest portion of chicken registers 165°F.
- Let stand 10 minutes before slicing.
