Southwestern Crustless Quiche
Creamy Coleslaw and Crispy Bacon
Ingredients
- 1 Tbsp olive oil, divided
- ½ cup thinly sliced onion
- ½ cup thinly sliced red bell pepper
- 6 large eggs, lightly beaten
- ½ tsp ground cumin
- 1 clove garlic, minced
Instructions
- Preheat oven to 400°F.
- Heat 2 tsp oil in a small skillet over medium-high heat. Add onion and bell pepper to pan; cook 10 minutes or until tender, stirring frequently.
- Combine onion mixture, eggs, ground cumin, garlic, and ½ tsp each salt, black pepper in a bowl. Pour into a 9-inch pie plate coated with remaining 1 tsp oil.
- Bake 40 minutes or until set in center.

- 2 Tbsp mayonnaise
- 1 Tbsp plain Greek yogurt
- 1 tsp cider vinegar
- ½ (16-oz) pkg coleslaw mix
- 4 slices bacon
Side Dish Instructions
- Whisk together mayonnaise, yogurt, and vinegar in a medium bowl.
- Stir in coleslaw; refrigerate 15 minutes. Season to taste with salt and pepper.
- Cook bacon according to package directions.
