Peanutty Beef Stir-Fry

Ingredients

  • ½ cup creamy peanut butter
  • 2 Tbsp soy sauce
  • 2 Tbsp brown sugar
  • 1 Tbsp Sriracha hot sauce (optional)
  • 2 lb flank steak
  • 1 tsp salt, ½ tsp pepper
  • ¼ cup olive oil
  • 1 large red bell pepper, cut into thin strips
  • ¼ cup (or more) chopped peanuts

Instructions

  1. Whisk together first 4 ingredients with 2 Tbsp water. Cut beef diagonally across the grain into thin slices; sprinkle with salt and pepper.
  2. Heat 2 Tbsp oil in a large nonstick skillet over medium-high heat; add half of beef, and sauté 3 minutes per side or until done.
  3. Repeat with remaining oil and beef. Add bell pepper; sauté 2 to 3 minutes.
  4. Return beef to skillet; add peanut butter mixture, and cook just until heated.
  5. Serve over rice. Sprinkle with chopped peanuts.

Side Dish Ingredients

  • 1½ cups jasmine rice
  • 6 cups cubed seedless watermelon
  • 2 cups cubed fresh pineapple
  • 2 Tbsp lime juice
  • 1 tsp sugar

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Stir together watermelon, pineapple, lime juice and sugar in a large bowl.
