Peanutty Beef Stir-Fry
Jasmine Rice and Pineapple-Watermelon Toss
Ingredients
- ½ cup creamy peanut butter
- 2 Tbsp soy sauce
- 2 Tbsp brown sugar
- 1 Tbsp Sriracha hot sauce (optional)
- 2 lb flank steak
- 1 tsp salt, ½ tsp pepper
- ¼ cup olive oil
- 1 large red bell pepper, cut into thin strips
- ¼ cup (or more) chopped peanuts
Instructions
- Whisk together first 4 ingredients with 2 Tbsp water. Cut beef diagonally across the grain into thin slices; sprinkle with salt and pepper.
- Heat 2 Tbsp oil in a large nonstick skillet over medium-high heat; add half of beef, and sauté 3 minutes per side or until done.
- Repeat with remaining oil and beef. Add bell pepper; sauté 2 to 3 minutes.
- Return beef to skillet; add peanut butter mixture, and cook just until heated.
- Serve over rice. Sprinkle with chopped peanuts.
Side Dish Ingredients
- 1½ cups jasmine rice
- 6 cups cubed seedless watermelon
- 2 cups cubed fresh pineapple
- 2 Tbsp lime juice
- 1 tsp sugar
Side Dish Instructions
- Cook rice according to package directions.
- Stir together watermelon, pineapple, lime juice and sugar in a large bowl.
