Jamaican Jerk Turkey Wraps
Mango-Cucumber SaladIngredients
- 2 Tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 (20-oz) pkg lean ground turkey
- 2 Tbsp fresh lime juice
- 1½ Tbsp Jerk seasoning
- 1 tsp dried oregano
- 1 head Bibb lettuce, leaves separated
Instructions
- Heat oil in a large skillet over medium-high heat. Add onion and garlic; cook 6 minutes or until onion is browned. Stir in ground turkey, lime juice, Jerk seasoning and oregano. Cook 8 minutes or until turkey is browned, stirring to crumble.
- Spoon turkey mixture onto lettuce leaves; roll up.
Side Dish Ingredients
- 2 Tbsp fresh lime juice
- 1 tsp honey
- 1 tsp crushed red pepper
- 2 ripe mangoes, peeled and cubed (see note)
- 1 cucumber, seeded and grated
- 1 avocado, pitted and diced
Side Dish Instructions
- Whisk together first 3 ingredients in a serving bowl. Add mangoes and cucumber, tossing well. Season to taste with salt.
- Stir in avocado just before serving.
