One Dish Dinner
Chicken Salad-Brown Rice Bowls with Walnuts and Fruit

Ingredients
- 2 (8.8-oz) pouches microwavable brown rice
- ½ cup chopped walnuts
- 1 (5-oz) pkg spring mix
- 1½ cups chopped rotisserie chicken
- 2 cups seedless red grapes
- 2 cups blueberries
- ½ cup crumbled feta cheese
- ⅓ cup chopped green onions
- ⅓ cup torn fresh basil
- ¼ cup balsamic vinegar
- 3 Tbsp packed brown sugar
- 2 Tbsp low-sodium soy sauce
- 2 Tbsp fresh lemon juice
- 3 Tbsp olive oil
Instructions
- Prepare rice according to package directions.
- Cook nuts in a nonstick skillet over medium-low heat until toasted and fragrant, stirring constantly.
- Combine rice, nuts, spring mix, chicken, grapes, blueberries, cheese, green onions and basil in a bowl.
- Whisk together vinegar, brown sugar, soy sauce, lemon juice, ½ tsp salt and ¼ tsp pepper. Gradually whisk in oil. Drizzle dressing over salad, tossing to coat.
