Chicken Salad-Brown Rice Bowls with Walnuts and Fruit

Ingredients

  • 2 (8.8-oz) pouches microwavable brown rice
  • ½ cup chopped walnuts
  • 1 (5-oz) pkg spring mix
  • 1½ cups chopped rotisserie chicken
  • 2 cups seedless red grapes
  • 2 cups blueberries
  • ½ cup crumbled feta cheese
  • ⅓ cup chopped green onions
  • ⅓ cup torn fresh basil
  • ¼ cup balsamic vinegar
  • 3 Tbsp packed brown sugar
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp fresh lemon juice
  • 3 Tbsp olive oil

Instructions

  1. Prepare rice according to package directions.
  2. Cook nuts in a nonstick skillet over medium-low heat until toasted and fragrant, stirring constantly.
  3. Combine rice, nuts, spring mix, chicken, grapes, blueberries, cheese, green onions and basil in a bowl.
  4. Whisk together vinegar, brown sugar, soy sauce, lemon juice, ½ tsp salt and ¼ tsp pepper. Gradually whisk in oil. Drizzle dressing over salad, tossing to coat.
