Seared Lamb Loin Chops
Fennel, Avocado and Grapefruit Salad
Ingredients
- 1 Tbsp avocado oil
- 4 (4-oz) lamb loin chops
- 1 Tbsp chopped fresh parsley
- ½ tsp grated lemon rind
Instructions
- Heat oil in a large nonstick skillet over medium-high heat.
- Rub lamb chops with parsley, lemon rind, ¼ tsp salt and ¼ tsp pepper.
- Cook chops 4 minutes per side or to desired doneness.
Side Dish Ingredients
- 1½ Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- 1 small avocado, peeled, pitted and cut into chunks
- 1 small fennel bulb, thinly sliced
- 1 small grapefruit, peeled and divided into sections
Side Dish Instructions
- Combine oil and lemon juice in a large bowl; whisk until well blended.
- Add avocado, fennel and grapefruit.
- Sprinkle with ½ tsp kosher salt and ¼ tsp pepper.
- Toss gently to coat.
