Seared Lamb Loin Chops

Fennel, Avocado and Grapefruit Salad

Ingredients

  • 1 Tbsp avocado oil
  • 4 (4-oz) lamb loin chops
  • 1 Tbsp chopped fresh parsley
  • ½ tsp grated lemon rind

Instructions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Rub lamb chops with parsley, lemon rind, ¼ tsp salt and ¼ tsp pepper.
  3. Cook chops 4 minutes per side or to desired doneness.

Side Dish Ingredients

  • 1½ Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • 1 small avocado, peeled, pitted and cut into chunks
  • 1 small fennel bulb, thinly sliced
  • 1 small grapefruit, peeled and divided into sections

Side Dish Instructions

  1. Combine oil and lemon juice in a large bowl; whisk until well blended.
  2. Add avocado, fennel and grapefruit.
  3. Sprinkle with ½ tsp kosher salt and ¼ tsp pepper.
  4. Toss gently to coat.
