Baked Chicken Thighs with Olives
Orzo with Mushrooms
Ingredients
- 12 bone-in, skin-on chicken thighs, skinned
- 1 onion, thinly sliced
- ½ cup chopped pimiento-stuffed olives
- 1 cup low-sodium chicken broth
- 2 Tbsp lemon juice
- 2 Tbsp Greek seasoning
- ½ tsp salt, ½ tsp pepper
Instructions
- Preheat oven to 350˚F.
- Combine chicken, onion, and olives in a 13- x 9-inch baking dish.
- Combine broth, lemon juice, Greek seasoning, salt and pepper; pour over chicken. Cover.
- Bake 40 minutes or until chicken is done.

- 1½ cups whole wheat orzo
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 1 (8-oz) pkg sliced mushrooms
- ½ tsp salt, ½ tsp pepper
Side Dish Instructions
- Prepare orzo according to package directions.
- Meanwhile, sauté garlic in hot oil in a large nonstick skillet over medium heat 1 minute or until tender.
- Add mushrooms, and sauté 5 minutes or until browned. Combine orzo, mushrooms, salt, and pepper.
