Baked Chicken Thighs with Olives

Ingredients

  • 12 bone-in, skin-on chicken thighs, skinned
  • 1 onion, thinly sliced
  • ½ cup chopped pimiento-stuffed olives
  • 1 cup low-sodium chicken broth
  • 2 Tbsp lemon juice
  • 2 Tbsp Greek seasoning
  • ½ tsp salt, ½ tsp pepper

Instructions

  1. Preheat oven to 350˚F.
  2. Combine chicken, onion, and olives in a 13- x 9-inch baking dish.
  3. Combine broth, lemon juice, Greek seasoning, salt and pepper; pour over chicken. Cover.
  4. Bake 40 minutes or until chicken is done.

  • 1½ cups whole wheat orzo
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (8-oz) pkg sliced mushrooms
  • ½ tsp salt, ½ tsp pepper

Side Dish Instructions

  1. Prepare orzo according to package directions.
  2. Meanwhile, sauté garlic in hot oil in a large nonstick skillet over medium heat 1 minute or until tender.
  3. Add mushrooms, and sauté 5 minutes or until browned. Combine orzo, mushrooms, salt, and pepper.
