General Tso's Tofu

Brown Rice and Steamed Broccoli

Ingredients

  • 1 (14-oz) pkg extra-firm tofu
  • ½ cup brown sugar
  • 3 Tbsp hoisin sauce
  • 3 Tbsp tomato paste
  • 2 Tbsp soy sauce
  • 2 Tbsp rice wine vinegar
  • 1 Tbsp Sriracha Asian hot sauce
  • 1 Tbsp sesame oil
  • 3 Tbsp cornstarch
  • 3 Tbsp vegetable oil, divided
  • 3 Tbsp minced peeled fresh ginger

Instructions

  1. Place tofu on heavy-duty paper towels; cover with additional paper towels. Let stand 15 minutes; cut into cubes.
  2. Meanwhile, combine brown sugar, hoisin sauce, tomato paste, soy sauce, vinegar, Sriracha sauce, and sesame oil; set aside. Toss tofu with cornstarch to coat lightly.
  3. Heat 2 Tbsp oil in large skillet over medium-heat heat. Add tofu; cook 5 to 7 minutes or until browned on all sides.
  4. Remove from skillet; place on paper towels to drain. Heat remaining 1 Tbsp oil in skillet over medium-high heat; add ginger and cook 1 minute or until fragrant.
  5. Add brown sugar mixture to skillet; cook 2 to 3 minutes until thickened and throughly heated. Add tofu to sauce; toss to coat tofu. Serve over brown rice.

Side Dish Ingredients

  • 1½ cups brown rice
  • 2 lb head broccoli, cut into florets

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Add broccoli to 1-inch of boiling water in a saucepan. Cover, reduce heat to medium, and cook 5 to 6 minutes or until crisp-tender. Season to taste.
