Asian Beef Lettuce Wraps

Ingredients

  • 1 lb ground beef
  • 1 (8-oz) pkg whole mushrooms, finely chopped
  • ½ cup chopped onion
  • 3 cloves garlic, minced
  • ¼ cup hoisin sauce
  • 1 Tbsp rice vinegar
  • 1 Tbsp soy sauce
  • 1 tsp Asian chili sauce
  • 1 head iceberg lettuce, separated into leaves
  • 1 (10-oz) pkg shredded carrots
  • 1 cup sliced green onions

Instructions

  1. Cook ground beef, mushrooms, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain, and return mixture to skillet.
  2. Stir in hoisin sauce, vinegar, soy sauce, and chili sauce; cook until heated through.
  3. Serve mixture in lettuce leaves, topped with carrots and green onions.

Side Dish Ingredients

  • 2 Tbsp sesame oil
  • 1 Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 1 large head bok choy, chopped

Side Dish Instructions

  1. Whisk together oil, soy sauce and vinegar in a large bowl.
  2. Add bok choy, tossing to coat.
  3. Cook bok choy in a large nonstick skillet over medium-high heat until tender.
