Cajun Slow Cooker Chuck Roast

Ingredients

  • 3 lb boneless chuck roast, trimmed and cut into 1-inch pieces
  • 1½ Tbsp Cajun seasoning
  • 1 tsp salt
  • 4 carrots, chopped
  • 1 large onion, thinly sliced
  • 1 cup fresh orange juice
  • 1 (14.5-oz) can chicken broth

Instructions

  1. Rub chuck roast all over with Cajun seasoning and salt.
  2. Place carrots and onion in bottom of a 5- to 7-quart slow cooker; place chuck roast over vegetables.
  3. Pour orange juice and broth around roast; cover and cook on LOW 6 to 8 hours or until roast is very tender.

Side Dish Ingredients

  • 2 heads cauliflower
  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt, ½ tsp pepper

Side Dish Instructions

  1. Place 2 large rimmed baking sheets in oven. Preheat oven to 450°F.
  2. Remove stems from cauliflower.
  3. Cut down the center of each cauliflower and divide in half. Cut halves into ¾-inch steaks.
  4. Cut ends of cauliflower heads into large florets.
  5. Combine steaks and florets with oil, garlic, salt and pepper; spread in a single layer on preheated pans.
  6. Bake 30 to 35 minutes or until brown and tender, turning once.
