Cajun Slow Cooker Chuck Roast
Roasted Cauliflower SteaksIngredients
- 3 lb boneless chuck roast, trimmed and cut into 1-inch pieces
- 1½ Tbsp Cajun seasoning
- 1 tsp salt
- 4 carrots, chopped
- 1 large onion, thinly sliced
- 1 cup fresh orange juice
- 1 (14.5-oz) can chicken broth
Instructions
- Rub chuck roast all over with Cajun seasoning and salt.
- Place carrots and onion in bottom of a 5- to 7-quart slow cooker; place chuck roast over vegetables.
- Pour orange juice and broth around roast; cover and cook on LOW 6 to 8 hours or until roast is very tender.
Side Dish Ingredients
- 2 heads cauliflower
- 3 Tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp salt, ½ tsp pepper
Side Dish Instructions
- Place 2 large rimmed baking sheets in oven. Preheat oven to 450°F.
- Remove stems from cauliflower.
- Cut down the center of each cauliflower and divide in half. Cut halves into ¾-inch steaks.
- Cut ends of cauliflower heads into large florets.
- Combine steaks and florets with oil, garlic, salt and pepper; spread in a single layer on preheated pans.
- Bake 30 to 35 minutes or until brown and tender, turning once.
