Sweet Beef and Pepper Skillet
Fresh Orange Wedges
Ingredients
- ⅓ cup instant brown rice
- ½ lb extra lean ground beef
- 1 (8-oz) pkg sweet mini peppers, thinly sliced
- ½ red onion, thinly sliced
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1½ Tbsp low-sodium soy sauce
- 1 Tbsp balsamic vinegar
- 1 Tbsp molasses
- 1½ tsp Worcestershire sauce
- 2 tsp cornstarch
Instructions
- Cook rice according to package directions.
- Meanwhile, cook beef in a skillet over medium heat until browned. Remove from skillet.
- Cook sweet peppers, onion and garlic in hot oil in skillet over medium-high heat 4 minutes or until just tender.
- Whisk together ½ cup water, soy sauce, vinegar, molasses, Worcestershire and ½ tsp pepper in a bowl; whisk in cornstarch until smooth. Add to pepper mixture with beef.
- Bring to a boil, reduce heat, and simmer 1 minute or until sauce is thickened. Serve over rice.
