Sweet Beef and Pepper Skillet

Ingredients

  • ⅓ cup instant brown rice
  • ½ lb extra lean ground beef
  • 1 (8-oz) pkg sweet mini peppers, thinly sliced
  • ½ red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1½ Tbsp low-sodium soy sauce
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp molasses
  • 1½ tsp Worcestershire sauce
  • 2 tsp cornstarch

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook beef in a skillet over medium heat until browned. Remove from skillet.
  3. Cook sweet peppers, onion and garlic in hot oil in skillet over medium-high heat 4 minutes or until just tender.
  4. Whisk together ½ cup water, soy sauce, vinegar, molasses, Worcestershire and ½ tsp pepper in a bowl; whisk in cornstarch until smooth. Add to pepper mixture with beef.
  5. Bring to a boil, reduce heat, and simmer 1 minute or until sauce is thickened. Serve over rice.
