Greek Turkey Burgers

Warm Ranch Potato Salad and Baby Carrots

Ingredients

  • 1 red onion
  • 1½ lb ground turkey
  • ⅓ cup sun-dried tomatoes in oil, drained and chopped
  • 3 cloves garlic, minced
  • 2 Tbsp Greek seasoning
  • ½ tsp salt
  • 1 (4-oz) pkg crumbled feta cheese, divided
  • 2 cups baby spinach or baby arugula (or any lettuce)
  • 2 Roma tomatoes, sliced
  • 6 burger buns (any type), toasted
  • Mayonnaise

Instructions

  1. Cut red onion into thin rings; finely chop enough onion to yield ⅓ cup, and set aside remaining onion as a topping.
  2. Combine ground turkey, ⅓ cup onion, sun-dried tomatoes, garlic, Greek seasoning and salt; mix with hands.
  3. Stir in ¼ cup feta cheese. Shape mixture into 6 patties.
  4. Cook burgers in a large skillet (or grill pan) over medium-high heat 4 to 5 minutes per side or until no longer pink.
  5. Assemble sandwiches with mayonnaise, burger patties, sliced tomato, red onion rings, spinach and remaining feta cheese on toasted buns.

Side Dish Ingredients

  • 1½ lb small red potatoes
  • ¼ cup Ranch dressing
  • ¼ cup milk
  • ½ tsp salt, ¼ tsp pepper
  • 1 (1-lb) bag baby carrots

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil; reduce heat to simmer, and cook 10 to 15 minutes or until potatoes are tender.
  2. Drain potatoes; cut in quarters.
  3. Combine ¼ cup Ranch dressing and milk; pour over potatoes while potatoes are still hot. Add salt and pepper.
  4. Serve baby carrots with additional Ranch dressing, if desired.
