Greek Turkey Burgers
Warm Ranch Potato Salad and Baby Carrots
Ingredients
- 1 red onion
- 1½ lb ground turkey
- ⅓ cup sun-dried tomatoes in oil, drained and chopped
- 3 cloves garlic, minced
- 2 Tbsp Greek seasoning
- ½ tsp salt
- 1 (4-oz) pkg crumbled feta cheese, divided
- 2 cups baby spinach or baby arugula (or any lettuce)
- 2 Roma tomatoes, sliced
- 6 burger buns (any type), toasted
- Mayonnaise
Instructions
- Cut red onion into thin rings; finely chop enough onion to yield ⅓ cup, and set aside remaining onion as a topping.
- Combine ground turkey, ⅓ cup onion, sun-dried tomatoes, garlic, Greek seasoning and salt; mix with hands.
- Stir in ¼ cup feta cheese. Shape mixture into 6 patties.
- Cook burgers in a large skillet (or grill pan) over medium-high heat 4 to 5 minutes per side or until no longer pink.
- Assemble sandwiches with mayonnaise, burger patties, sliced tomato, red onion rings, spinach and remaining feta cheese on toasted buns.
Side Dish Ingredients
- 1½ lb small red potatoes
- ¼ cup Ranch dressing
- ¼ cup milk
- ½ tsp salt, ¼ tsp pepper
- 1 (1-lb) bag baby carrots
Side Dish Instructions
- Bring potatoes and water to cover to a boil; reduce heat to simmer, and cook 10 to 15 minutes or until potatoes are tender.
- Drain potatoes; cut in quarters.
- Combine ¼ cup Ranch dressing and milk; pour over potatoes while potatoes are still hot. Add salt and pepper.
- Serve baby carrots with additional Ranch dressing, if desired.
