Sweet Potato-Beef Nachos
Sweet Potato ChipsIngredients
- ¾ lb grass-fed ground beef
- 2 cloves garlic, minced
- ½ cup organic refrigerated salsa
- 2 Tbsp Mexican seasoning
- Sweet Potato Chips (recipe follows)
- 1 cup quartered grape tomatoes
- 1 avocado, pitted and diced
- 3 Tbsp chopped fresh cilantro
- Sliced jalapeño peppers (optional)
Instructions
- Cook ground beef and garlic in a skillet over medium heat until no longer pink; drain and return to skillet.
- Stir in salsa and seasoning.
- Cook, stirring, over medium heat, until thickened.
- Arrange Sweet Potato Chips on a platter; spoon beef mixture over chips.
- Top with tomatoes, avocado and cilantro; garnish with peppers, if desired.
Side Dish Ingredients
- 2 sweet potatoes
- 2 Tbsp avocado oil
Side Dish Instructions
- Preheat oven to 400°F.
- Using a mandoline (or a sharp knife), thinly slice sweet potatoes.
- Toss together potatoes and oil on a large rimmed baking sheet; arrange in a single layer.
- Sprinkle with ½ tsp each salt and pepper.
- Bake 25 to 35 minutes or until edges are browned and potatoes are crisp.
- Cool "chips" on wire racks.
