Hot Greek Salad

Ingredients

  • ½ lb ground beef (or use ground turkey)
  • ¼ cup chopped onion
  • 1 (15.5-oz) can cannellini beans, drained and rinsed
  • 2 Roma tomatoes, chopped
  • 2 tsp Greek seasoning
  • 1 cucumber, diced
  • ⅓ cup crumbled feta cheese
  • ¼ cup balsamic vinaigrette
  • 1 (9-oz) pkg chopped romaine lettuce

Instructions

  1. Cook beef and onion in a skillet until meat is browned, stirring to crumble; drain and return to skillet.
  2. Add beans, tomatoes and Greek seasoning; cook until hot and bubbly.
  3. Combine cucumber, feta cheese and dressing in a bowl.
  4. Divide lettuce between 2 plates; top with beef mixture and desired amount of cucumber mixture.
  5. Serve with additional vinaigrette, if desired.
