One Dish Dinner
Hot Greek Salad

Ingredients
- ½ lb ground beef (or use ground turkey)
- ¼ cup chopped onion
- 1 (15.5-oz) can cannellini beans, drained and rinsed
- 2 Roma tomatoes, chopped
- 2 tsp Greek seasoning
- 1 cucumber, diced
- ⅓ cup crumbled feta cheese
- ¼ cup balsamic vinaigrette
- 1 (9-oz) pkg chopped romaine lettuce
Instructions
- Cook beef and onion in a skillet until meat is browned, stirring to crumble; drain and return to skillet.
- Add beans, tomatoes and Greek seasoning; cook until hot and bubbly.
- Combine cucumber, feta cheese and dressing in a bowl.
- Divide lettuce between 2 plates; top with beef mixture and desired amount of cucumber mixture.
- Serve with additional vinaigrette, if desired.
