Paleo Sweet Potato-Beef Nachos
Sweet Potato ChipsIngredients
- 1½ lb lean ground beef
- 3 cloves garlic, minced
- 1 cup refrigerated salsa
- 2 Tbsp salt-free Mexican seasoning
- Sweet Potato Chips (recipe follows)
- 1 pint organic grape tomatoes, quartered
- 2 avocados, pitted and chopped
- ¼ cup chopped fresh cilantro
- Sliced organic jalapeño peppers (optional)
Instructions
- Cook ground beef and garlic in a large skillet over medium heat until no longer pink; drain and return to skillet.
- Stir in salsa and seasoning.
- Cook, stirring, over medium heat, until thickened.
- Arrange Sweet Potato Chips on a large platter; spoon beef mixture over chips.
- Top with tomatoes, avocado and cilantro; garnish with peppers, if desired.
Side Dish Ingredients
- 3 large sweet potatoes
- 3 Tbsp olive oil
Side Dish Instructions
- Preheat oven to 400°F.
- Using a mandoline (or a sharp knife), thinly slice sweet potatoes.
- Toss together potatoes and oil on rimmed baking sheets; arrange in a single layer on pans.
- Sprinkle with 1 tsp each salt and pepper.
- Bake 25 to 35 minutes or until edges are browned and potatoes are crisp.
- Cool "chips" on wire racks.
