Paleo Sweet Potato-Beef Nachos

Ingredients

  • 1½ lb lean ground beef
  • 3 cloves garlic, minced
  • 1 cup refrigerated salsa
  • 2 Tbsp salt-free Mexican seasoning
  • Sweet Potato Chips (recipe follows)
  • 1 pint organic grape tomatoes, quartered
  • 2 avocados, pitted and chopped
  • ¼ cup chopped fresh cilantro
  • Sliced organic jalapeño peppers (optional)

Instructions

  1. Cook ground beef and garlic in a large skillet over medium heat until no longer pink; drain and return to skillet.
  2. Stir in salsa and seasoning.
  3. Cook, stirring, over medium heat, until thickened.
  4. Arrange Sweet Potato Chips on a large platter; spoon beef mixture over chips.
  5. Top with tomatoes, avocado and cilantro; garnish with peppers, if desired.

Side Dish Ingredients

  • 3 large sweet potatoes
  • 3 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Using a mandoline (or a sharp knife), thinly slice sweet potatoes.
  3. Toss together potatoes and oil on rimmed baking sheets; arrange in a single layer on pans.
  4. Sprinkle with 1 tsp each salt and pepper.
  5. Bake 25 to 35 minutes or until edges are browned and potatoes are crisp.
  6. Cool "chips" on wire racks.
