Tex-Mex Sloppy Joes

Cilantro-Lime Coleslaw

Ingredients

  • 1½ lb ground beef
  • 1 cup chopped onion
  • 1 (10-oz) can enchilada sauce
  • 1 (8-oz) can tomato sauce
  • 1 (1-oz) envelope taco seasoning mix
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (12-oz) pkg frozen corn
  • 6 hamburger buns

Instructions

  1. Cook beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  2. Stir in enchilada sauce, tomato sauce, taco seasoning mix, beans and corn. Bring to a boil; reduce heat, and simmer 10 minutes.
  3. Split and toast buns, if desired. Serve beef mixture on buns with desired amount of Cilantro-Lime Coleslaw.

Side Dish Ingredients

  • ½ cup mayonnaise
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp fresh lime juice
  • 1 tsp honey
  • ½ tsp salt, ¼ tsp pepper
  • 1 (16-oz) pkg tricolor coleslaw mix

Side Dish Instructions

  1. Whisk together mayonnaise, cilantro, lime juice, honey, salt and pepper.
  2. Stir in coleslaw mix. Chill until ready to serve.
