Tex-Mex Sloppy Joes
Cilantro-Lime Coleslaw
Ingredients
- 1½ lb ground beef
- 1 cup chopped onion
- 1 (10-oz) can enchilada sauce
- 1 (8-oz) can tomato sauce
- 1 (1-oz) envelope taco seasoning mix
- 1 (15-oz) can black beans, drained and rinsed
- 1 (12-oz) pkg frozen corn
- 6 hamburger buns
Instructions
- Cook beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
- Stir in enchilada sauce, tomato sauce, taco seasoning mix, beans and corn. Bring to a boil; reduce heat, and simmer 10 minutes.
- Split and toast buns, if desired. Serve beef mixture on buns with desired amount of Cilantro-Lime Coleslaw.

- ½ cup mayonnaise
- ¼ cup chopped fresh cilantro
- 1 Tbsp fresh lime juice
- 1 tsp honey
- ½ tsp salt, ¼ tsp pepper
- 1 (16-oz) pkg tricolor coleslaw mix
Side Dish Instructions
- Whisk together mayonnaise, cilantro, lime juice, honey, salt and pepper.
- Stir in coleslaw mix. Chill until ready to serve.
