Fish Tacos with Cilantro Sour Cream

Ingredients

  • ⅓ cup sour cream
  • 1 Tbsp fresh lime juice
  • ¼ cup chopped fresh cilantro
  • ¼ tsp cayenne pepper
  • 2 lb tilapia fillets
  • 1 Tbsp olive oil
  • 12 fajita-size flour tortillas
  • 1 (8-oz) pkg shredded lettuce
  • 1 (8-oz) pkg shredded Cheddar cheese

Instructions

  1. Stir together sour cream, lime juice, cilantro and cayenne pepper.
  2. Lightly season fish with salt and pepper. Cook in hot oil in a large skillet over medium-high heat 4 minutes per side or until fish flakes with a fork.
  3. Flake fish into large pieces.
  4. Heat tortillas according to package directions. Serve fish in tortillas with lettuce, cheese and sour cream mixture.

Side Dish Ingredients

  • 1 cantaloupe
  • Juice of 1 lime

Side Dish Instructions

  1. Peel melon, and cut into bite-size chunks. Place in a bowl.
  2. Drizzle with lime juice, and lightly season with salt and pepper. Chill until ready to serve.
