Fish Tacos with Cilantro Sour Cream
Chilled Lime CantaloupeIngredients
- ⅓ cup sour cream
- 1 Tbsp fresh lime juice
- ¼ cup chopped fresh cilantro
- ¼ tsp cayenne pepper
- 2 lb tilapia fillets
- 1 Tbsp olive oil
- 12 fajita-size flour tortillas
- 1 (8-oz) pkg shredded lettuce
- 1 (8-oz) pkg shredded Cheddar cheese
Instructions
- Stir together sour cream, lime juice, cilantro and cayenne pepper.
- Lightly season fish with salt and pepper. Cook in hot oil in a large skillet over medium-high heat 4 minutes per side or until fish flakes with a fork.
- Flake fish into large pieces.
- Heat tortillas according to package directions. Serve fish in tortillas with lettuce, cheese and sour cream mixture.

- 1 cantaloupe
- Juice of 1 lime
Side Dish Instructions
- Peel melon, and cut into bite-size chunks. Place in a bowl.
- Drizzle with lime juice, and lightly season with salt and pepper. Chill until ready to serve.
