One Dish Dinner
Vegan Taco Bowl

Ingredients
- 2 cups quinoa
- 2 cups frozen corn kernels
- 1 (16-oz) bag tortilla chips
- 6 cups chopped romaine lettuce
- 2 (15-oz) cans red kidney beans, drained and rinsed
- 3 Roma tomatoes, diced
- 2 avocados, diced
- ½ cup chopped green onions
- 1 cup refrigerated salsa
Instructions
- Cook quinoa and corn separately according to package directions.
- Break chips.
- Layer chips, quinoa, lettuce, kidney beans, corn, tomatoes, avocado and green onions in 6 large serving bowls.
- Serve with salsa.
