Ingredients

  • 2 cups quinoa
  • 2 cups frozen corn kernels
  • 1 (16-oz) bag tortilla chips
  • 6 cups chopped romaine lettuce
  • 2 (15-oz) cans red kidney beans, drained and rinsed
  • 3 Roma tomatoes, diced
  • 2 avocados, diced
  • ½ cup chopped green onions
  • 1 cup refrigerated salsa

Instructions

  1. Cook quinoa and corn separately according to package directions.
  2. Break chips.
  3. Layer chips, quinoa, lettuce, kidney beans, corn, tomatoes, avocado and green onions in 6 large serving bowls.
  4. Serve with salsa.
