Tex-Mex Sloppy Joes

Cilantro-Lime Coleslaw, Tortilla Chips and Guacamole

Ingredients

  • 1½ lb ground beef
  • ½ onion, chopped
  • 1 (10-oz) can enchilada sauce
  • 1 (8-oz) can tomato sauce
  • 1 (1-oz) pkg taco seasoning mix
  • 1 (15-oz) can frijoles cubanos, rinsed and drained
  • 2 cups frozen corn
  • 6 hamburger buns

Instructions

  1. Cook ground beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  2. Stir in enchilada sauce, tomato sauce, taco seasoning mix, beans, and corn.
  3. Bring to a boil; reduce heat, and simmer 10 minutes.
  4. Split and toast buns, if desired.
  5. Spoon beef mixture onto buns; top with desired amount of Cilantro-Lime Coleslaw. Cover with bun tops.

Side Dish Ingredients

  • 1 (16-oz) pkg tricolor coleslaw mix
  • ½ cup mayonnaise
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp fresh lime juice
  • 1 tsp honey
  • ½ tsp salt, ¼ tsp pepper
  • 1 (10-oz) pkg tortilla scoops
  • 1 (7-oz) carton refrigerated guacamole

Side Dish Instructions

  1. Combine coleslaw mix, mayonnaise, cilantro, lime juice, honey, salt, and pepper in a medium bowl, tossing to coat.
  2. Chill until ready to serve.
  3. Serve chips with guacamole.
