Tex-Mex Sloppy Joes
Cilantro-Lime Coleslaw, Tortilla Chips and Guacamole
Ingredients
- 1½ lb ground beef
- ½ onion, chopped
- 1 (10-oz) can enchilada sauce
- 1 (8-oz) can tomato sauce
- 1 (1-oz) pkg taco seasoning mix
- 1 (15-oz) can frijoles cubanos, rinsed and drained
- 2 cups frozen corn
- 6 hamburger buns
Instructions
- Cook ground beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
- Stir in enchilada sauce, tomato sauce, taco seasoning mix, beans, and corn.
- Bring to a boil; reduce heat, and simmer 10 minutes.
- Split and toast buns, if desired.
- Spoon beef mixture onto buns; top with desired amount of Cilantro-Lime Coleslaw. Cover with bun tops.
Side Dish Ingredients
- 1 (16-oz) pkg tricolor coleslaw mix
- ½ cup mayonnaise
- ¼ cup chopped fresh cilantro
- 1 Tbsp fresh lime juice
- 1 tsp honey
- ½ tsp salt, ¼ tsp pepper
- 1 (10-oz) pkg tortilla scoops
- 1 (7-oz) carton refrigerated guacamole
Side Dish Instructions
- Combine coleslaw mix, mayonnaise, cilantro, lime juice, honey, salt, and pepper in a medium bowl, tossing to coat.
- Chill until ready to serve.
- Serve chips with guacamole.
