Pesto Chicken and Tortellini Salad

Ingredients

  • 1 (9-oz) pkg refrigerated cheese tortellini
  • 1 (6.25-oz) jar pesto sauce
  • ½ lb boneless, skinless chicken breasts, pounded to an even thickness
  • 1 zucchini, cut in half lengthwise
  • 1 ear corn, husk and silks removed
  • 1 Tbsp olive oil
  • 2 tomatoes, chopped
  • ½ cup thinly sliced fresh basil
  • 1 Tbsp fresh lemon juice

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Cook pasta according to package directions; drain, and transfer to a bowl.
  3. Add pesto sauce; toss to coat.
  4. Meanwhile, place chicken, zucchini, and corn on a baking sheet; drizzle with oil, and season with salt and pepper.
  5. Grill on a grill rack, covered, 10 to 12 minutes or until vegetables are tender and chicken is done.
  6. Chop chicken and zucchini; remove corn kernels from cob.
  7. Add chicken, vegetables, tomatoes, basil, and lemon juice to pasta mixture; toss to coat.

Side Dish Ingredients

  • ½ (16-oz) loaf French bread, cut into ½-inch-thick slices
  • 2 Tbsp olive oil
  • ¼ tsp garlic powder

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Brush both sides of bread with oil; sprinkle with garlic powder.
  3. Place on a baking sheet; bake 15 minutes, turning once.
