Baked Cilantro Lime Salmon

Ingredients

  • 1½ Tbsp olive oil
  • ½ tsp grated lime rind
  • 1 Tbsp fresh lime juice
  • 1½ Tbsp chopped fresh cilantro
  • ½ small jalapeño, seeded and minced
  • 1 tsp bottled minced garlic
  • ¾ lb salmon fillet

Instructions

  1. Preheat oven to 400°F.
  2. Process oil, lime rind, lime juice, cilantro, jalapeño, and garlic in the work bowl of a food processor until combined.
  3. Place salmon, skin-side-down on a foil-lined baking sheet. Spread oil mixture over salmon.
  4. Bake 10 to 15 minutes or until salmon flakes easily with a fork.

Side Dish Ingredients

  • 1 Tbsp olive oil
  • 1 tsp bottled minced garlic
  • 1 bunch Broccolini, trimmed
  • 1 yellow squash, cut into ¼-inch-thick slices
  • ¼ tsp crushed red pepper

Side Dish Instructions

  1. Heat oil in a skillet over medium-high heat; add garlic, Broccolini, squash, crushed red pepper, and 2 Tbsp water.
  2. Cover and cook 3 minutes; uncover and cook 3 minutes or until liquid evaporates and Broccolini is tender. Season to taste.
