Peanut Butter and Jelly Pancakes

Ingredients
- ¾ cup all-purpose flour
- ¾ cup whole wheat flour
- 2 Tbsp sugar
- 2 tsp baking powder
- 1⅓ cups 1% low-fat milk
- 2 large eggs, lightly beaten
- ¼ cup peanut butter
- 1 Tbsp vegetable oil
- ½ tsp ground cinnamon
- ½ tsp pure vanilla extract
- 6 Tbsp favorite jam or jelly
Instructions
- Combine flours, sugar, baking powder, and ¼ tsp salt in a large bowl.
- Combine milk, eggs, peanut butter, oil, cinnamon, and vanilla in a separate bowl. Add liquid mixture to flour mixture, stirring until smooth.
- Heat a large nonstick skillet or griddle over medium-high heat; coat with cooking spray.
- Pour a scant ¼ cup of batter per pancake onto hot skillet or griddle. Turn when tops are covered with bubbles and edges look cooked.
- Serve with favorite jam or jelly.
