Peanut Butter and Jelly Pancakes

Ingredients

  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • 2 Tbsp sugar
  • 2 tsp baking powder
  • 1⅓ cups 1% low-fat milk
  • 2 large eggs, lightly beaten
  • ¼ cup peanut butter
  • 1 Tbsp vegetable oil
  • ½ tsp ground cinnamon
  • ½ tsp pure vanilla extract
  • 6 Tbsp favorite jam or jelly

Instructions

  1. Combine flours, sugar, baking powder, and ¼ tsp salt in a large bowl.
  2. Combine milk, eggs, peanut butter, oil, cinnamon, and vanilla in a separate bowl. Add liquid mixture to flour mixture, stirring until smooth.
  3. Heat a large nonstick skillet or griddle over medium-high heat; coat with cooking spray.
  4. Pour a scant ¼ cup of batter per pancake onto hot skillet or griddle. Turn when tops are covered with bubbles and edges look cooked.
  5. Serve with favorite jam or jelly.
